A tunic is a knee high peice of fabric that goes over the shoulders that the men of midevil times wore. It doesn't really has sides or sleeves. The color and quality of a tunic was dictated by social status. A man working in a quarry would have more then likely a undyed cotten or wool tunic. While a noble would have dyed, well spun fabric, possibly with trim. i hope this helped
