I like the concept of the poem. Personaly, I would have kept to the theme of not being able to explain poetry to a person who does not understand it, and finished with it like that.
Your ending does work as well though, and I must say "How does a poet admit to one who hates poetry, “I love you”?", is my favorite line. Also, when you start saying what her mind is filled with, and then you say what his mind is filled with, it makes it look like he as a poetic mind as well, when you say he doesn't in the poem. I don't know, those are some things I noticed. But over all, nice.
