I utterly love this. I reads very academically, which makes it hard to get into at first, but a reader that's willing to dig into the very methodical writing is rewarded in spades.
At first I thought this was going to be a zombie piece, but it transcends that quickly. And it starts spinning in allusions to the garden of Eden, making trees a thing of great horror, and offering bleak commentary on the human condition. This is a powerful work for how short it is, and compelling for how scholarly/folkloric the narrative feels.
I think the only thing I would change would be the first line. "They neglected to think about the aftermath," is stronger than "they'd neglected the aftermath."

This story has a wonderful concept, and I never thought about Immortals being food sources...or them neglecting the aftermath of their choices and neglecting the truth.
